The Italian’s Banchetto is 6 courses of quality food in a relaxed informal setting. Great for family and close friends to enjoy home style service, The Italian way.
The menu is prepared on the day of the event by Sandra and Brad and is presented as a Southern Italian style banquet inspired by the people and produce of the Mildura region.
The food is paired with Italian varietal wine made by the team at Chalmers and spawns an exciting new collaboration of small batch wine production, akin to the early #bucketwine projects made by Bart, Kim and Tennille in the early days of the establishment of Stonnington vineyard in Merbein. All of which has made under the watchful eye of Bruce and now sees the Chalmers team leaders in the Australian Alternate Wine industry.
Aligned with the informal and relaxed atmosphere that Sandra and Brad want their restaurant to be, their house wine are all local Italian varietals, uniquely unfiltered and served in humble water glasses. Just like at home in Italy. Simple and good.
In the kitchen Sandra Imbesi draws from her parents and family for inspiration. Her mother Rosa, from Calabria and her father John from Sicily are big influences of our food, keeping us grounded with recipes from their respective hometowns. Every year they return to Italy and stay with family for 3 months and this helps keep the connection strong.
Sandra’s speciality is desserts and has a renowned reputation for cannoli, tiramisu and traditional Continental cake (Torta Classica). Her fresh pasta, sour dough bread, panzerotti and arancini are amazing and her knowledge of speciality deli meats and cheese are invaluable.
Brad Fyfe compliments Sandra with over 37 years of kitchen experience. His love of Australian produce and insistence on use of local foods is evident throughout the menu. His experience in Italian cuisine includes previous appointments as Executive Chef for Stefano de Pieri and as Leader of the Slow Food Mildura movement curating the menus for their unique dining experience under the vines, Festa della Vendemmia.
